The two day conference was organized into 5 panels that discussed economies of livestock, labor and immigration, carbon sequestration, the future of dairy, and the ethics of consumption. Several hundred people attended in total. Planned with a grant from the Dean of Faculty, the event was cosponsored by History, Environmental Studies, Pace University, and New England Food Solutions. A second conference will be hosted by Pace University next year.
